These slow roasted cherry tomatoes are really easy to prepare and you simply place them in the oven to cook while you go about doing something else. We find cherry tomatoes work well for this, but of course you can use larger tomatoes with adjusted times. Like most recipes, the ingredients are key, get the best you can afford or that are available. 

I grumble regularly about tomatoes these days. When I was young they were a favourite, cut in half or quarters, a little salt, a perfect healthy after school snack. Today it's almost impossible to get tomatoes that actually taste like tomatoes without mortgaging your first born. The cheap ones rarely taste like tomatoes, lacking flavour and texture. Vine ripened organic tomatoes are definitely better, but you pay. Home grown would be best if you can, but enough ranting.

The slow roasting process, with the salt and sugar definitely enhances the flavour, you won't be disappointed. So try these anytime you wish to enhance a dish, have them as a snack or throw them in a pasta dish.
